Audible Weed Walk – Ep.79 “Earth Day – Earth Action – Earth Food “

Welcome to the 52nd Earth Day! Here I honor two earth-days that were initiated in 1970 and briefly look at the history focused on two human beings who care and single handed action – ultimately has a far reaching effect. Nevertheless, now, 52yrs later it looks like we have performed poorly as earth stewards. Instead of being dejected, it is time to remain in action…Following the inspiration of one of the films I had watched during the earth week, called FAT FICTION – I explored beyond the film on healthy food. True, of the macronutrients carbohydrates are not essential but a small amount is inevitable in a healthy balanced meal. Protein or rather amino acids and fat are essential as much as micro-nutrients. Animal proteins are considered complete. But then research shows millet and legume combinations are complete as well, with the added benefit of having fibers. Perfect.. so, I share a local millet based tabbouleh recipe here – with wild weedy greens providing micro-nutrients. If you want the recipe separately – write to edibleweedwalk@gmail.com
